Meal Plan Monday!

Hey ya'll! 
Here's the meal plan for the week! I will choose one recipe a week to list that I can totally guarantee is somewhat easy and delicious!

Monday: Parmesean Pork Filet, sliced new potatoes, & sliced carrots in crock pot  (Healthy, delicious, & easy!)

Tuesday: Chili with chopped green peppers & onions and spinach salad

Weds: PF Changs Beef & Broccoli Skillet

Thursday: Stuffed Asparagus & Cheese Chicken, green bean casserole, & crossaints

Friday: Date Night Out!

Sat: I am coordinating a wedding at The Biltmore, so we eat dinner there-B loves to cook so he will probably be grilling something!

Sunday: Super Bowl Sunday-Making Buffalo Chicken Dip which is a huge hit in the South at every party we go to, especially Football Parties! Shout out to my dear friend, Heather, for showing me the light!

Buffalo Chicken Dip-just in time for those Super Bowl Parties!

Ingredients

  • 2 (10 ounce) cans chunk chicken, drained
  • 2 (8 ounce) packages cream cheese, softened
  • 1 cup Ranch dressing
  • 3/4 cup pepper sauce (such as Frank's Red Hot®)
  • 1 1/2 cups shredded Cheddar cheese
  •  
  • 1 bunch celery, cleaned and cut into 4 inch pieces
  • 1 (8 ounce) box chicken-flavored crackers

Directions

  1. Heat chicken and hot sauce in a skillet over medium heat, until heated through. Stir in cream cheese and ranch dressing. Cook, stirring until well blended and warm. Mix in half of the shredded cheese, and transfer the mixture to a slow cooker. Sprinkle the remaining cheese over the top, cover, and cook on Low setting until hot and bubbly. Serve with celery sticks and crackers.

together on events! On Sunday, we went to our annual day at The Atlanta 
Boat Show with Michael, Lisa, Joey & Jesse, celebrated my bday, and 
enjoyed snow & 70's in January!

Spring in the South



What a gorgeous weekend in Georgia we are having in January! The sun is shining, birds are chirping, everyone is outside, it's capri/short sleeve weather, and spring sports are beginning for many of my friends' kids.  It's 65-68 degrees all weekend and we are making the most of it! We have been outside playing, having picnics, & long walks with the Double BOB. Jackson & Colton have been riding their new Mickey Mouse tricycles they got for Christmas from Nana & Gramps and I really love that we can use the playset we got last summer year round-makes it worth the investment! I'm thankful the twins are still napping 1:00-4:15 or 4:30 so that I can be inside for a bit to get stuff done around the house.  I know this spring & summer are going to be so much fun with the twins, friends, and especially since Brandon has finished working on the new boat that fits 8, compared to our last one that fit 4....we are looking forward to having friends out on the boat with us this year! We have major spring fever! (-;

70 Degree Weekend in January!

So, after we had the giant Snow in the South, we also had great mid-70's weather in January afterwards! We enjoyed it by doing yard work, haircuts for the twins, B finished up getting the boat ready for the spring, lots of tricycle riding, fun at the park, and jogging!

Recipes & Readers!

So, I figured out how to see the Stats and I actually have readers! Ok, about 25 a day, but it's more than my Momma, hubby, & a few BFF's! ha ha! So, a lot of my friends have asked me how I have such good eaters for the twins.  First, I think it is in their genes bc they are Gore boys, 2nd B & I have a major love of delicious food & LOVE new, fun, non-chain, trendy restaurants & am proud to say I have experienced so many "secret" ATL or hot restaurants throughout our time together.  Finally, I do have some tricks that I have either learned through trial & error, reading in books (Annabel Karmel & Jessica Seinfield are my go-to kiddie food authors), & I babysat religiously for about a total of 6 various families for years who all love food but are healthy, but not extreme healthy way-like their kids still got to eat cupcakes every once in a while. (-;  I aim to buy organic, but if you read the labels, some things are fast and easy and just as healthy nowadays. Anyways, each week, I'm going to start doing a post of our week's menu and add a recipe.  I'm by no means some outstanding chef-literally before 2003 I called B from my apartment and asked, "How do you make Mac & Cheese" with all seriousness and then I even made it wrong. Then, from 2003-2007 we were workaholics who ate Starbucks for breakfast, Healthy Choices everyday for lunch, and went out to dinner somewhere fabulous everynight. Then, I had twin boys and I said, Uh-oh, this Southern Momma better learn how to cook for all these boys! It was one of my goals that being a SAHM, I would learn to cook and I mean, really cook, light, healthy, delicious meals.  Sometimes they will be basic but I love to talk to my girls about what we are making for dinner for new ideas or just a reminder to get out of a routine.  So, this week's will be a quick overview and more details in later weeks.  I hope to inspire some of my 25 readers (ha ha!) and just to help the twins see what healthy & good eaters they were growing up and hope they realize the importance of feeding their children healthy one day!  Trust me, if you stick to one snack a day and realize some days kids will eat more and some days they will eat less, at some point they have to eat, so don't give in! I mean, who wouldn't want fruit snacks instead of green beans!? ha ha! 


This week's menu:
Sunday:  Pamesean Pork Loin, mashed potatoes, & green beans with almonds & FF Italian dressing
Throw it in the crock pot, add some water, made mashed potatoes out of a bag and added reduced fat Sour Cream & 2% cheese, green beans that were steamed and added almonds & dressing I use on my salads
Monday: Whole Wheat Pasta, add onions, green peppers, sauce in separate pan bc twins like less sauce than us, salad with chickpeas, & garlic bread
Tuesday: Stuffed Chicken with asparagus (cut it up a bunch for the twins and they love it bc it is breaded and cheese is in it so they forget their are veggies in it!), mac & cheese (throw in a lil carrot puree), & spinach salad
Weds: Whole Wheat Quesadillas with cheese, green peppers, red peppers, & corn inside, corn on the side, Garden Veggie Rice (that kind that takes 90 seconds in the microwave is my favorite!), sour cream, Yogurt smoothies
Thursday: Stouffer's Ckn Bake with veggies & salad
Friday: Always Pizza Night
Sat: Out in Buckhead dinner with my girls 


This week, dessert has been sugar free fudge pops (-;

Interview with The Crescent Magazine!

Today I had the priviledge of being interviewed by an editor at my sorority's national magazine, The Crescent.  Once you graduate, every Gamma Phi Beta across the nation receives The Crescent for life and updates about the sorority across the nation, alums who have gone on to do really amazing things like celebrities, authors, unique stories, charity work, etc.  The next edition is focused on Recruitment and I was asked to be highlighted as one of the Recruitment Advisors in the South & how we go about Recruitment in such a competitive region and tips/tricks/advice I have learned along the way.


I always said if I was lucky enough to be able to stay at home when I had kids I would certainly want to do something outside of the house on the side with work to keep my mind sharp and for adult interaction that didn't involve Baby/Toddler Talk (even though I love that just as much on playdate days!) but also I would find an organization I was passionate at to volunteer my time with while I was able to be at home with the twins. I was right on the verge of becoming a "Big Sister" with the Big Brother/Big Sister organization and had also considered doing some charity work at Children's Hospital of Atlanta when I got the call to be the Recruitment Advisor at UGA.





It has been really rewarding to go back to my chapter, work with good friends who I went to college with in other advisor roles, and this has totally filled the void of my cheerleading coaching days. I figured since I had twin boys, my close to 200 sorority girls would give me my fair share of girls and all that comes with that! ha ha! I hope I can be somewhat of a role model to them as Beth Fisher, Sara Cline, & Amy Lou who were my advisors and still good friends were to me!

Busy January!

January 2011 has been off to a busy start! After the big "Snow in the South" Brandon has been slammed with work-25 jobs this week and a call from a certain teen heart throb in the music industry that will be a fun job for him to do! I was super busy coordinating my January Wedding and was happy that my bride & groom returned from their honeymoon saying having me as their wedding coordinator on the biggest day of their lives was the best investment they made for their wedding! What a compliment! In other fun news, I was asked to help with an article for our sorority magazine, The Crescent, about being a Recruitment Advisor and will be working on that this week!

Jackson & Colton continue to be such a joy in our lives! Everyone warned me that terrible two's with twins would be exhausting and challenging and while that is true sometimes, I find it to be incredibly exciting, fun, and some of the best days of my life! Right now, at age 2, we spend our days doing the following: Preschool Tu/Thursday 9:00-1:00, Lifetime Fitness where I get to work out with friends and have some down time and the twins have a blast playing in the child center, playdates all over the ATL with various friends & kiddies, lunch with Daddy, Kidzstock, enjoying our new playset out back, train table, Geo Trax trains, plasma cars, arts & crafts, painting, cleaning, cooking, jogging, and lots of fun at the pool (thank goodness Lifetime Fitness has indoor/outdoor pools for year round swimming!)

Watching the bond between twins is one of the coolest experiences of my life-I know my other twin momma friends feel the same way.  It is so fascinating, especially growing up being an only child, to see these two lil boys who have been best buds since the day they were conceived and in my tummy side by side.  I used to babysit for my friend Beth's twin girls in college and I can't help but think that God had put me in that position for this very reason.  I certainly am reliving some of my days with Gracie and Sydney with my lil Jackson & Colton, just with trains instead of dolls! (-;  Same types of routines & fun I remember with the twin girls-playtime, Dora, storytime, same types of lunch, naptime, walks, times two! It really is amazing to see them develop their vocabulary simutaneously & learn concepts from each other at the same stage. Watching two lil toddlers the same age playing together, enjoying each other, getting in fights, and having a blast together just melts my heart!

In December, the twins were invited to their first Bowling Birthday Party to celebrate their twin buddies' birthdays-Andrew & Ethan. It was Jackson & Colton's 1st time bowling, they had a blast! Katie is a good friend of mine and my Lifetime Fitness buddy/twin momma friend and she also went to high school with Brandon!

Back to Life, Back to Reality (ya know that song, right?!)

Back to Life, Back to Reality-not sure who sings that song, but it has been stuck in my head all day long! ha! We sure did have a snow storm down south! I was born in Columbus, Ohio, raised in Roanoke, VA so I know what it is like to be in the snow and I was shocked when all the southern snow hysteria was actually accurate for once! 


We saw it said 100% snowfall so we decided to pack up the twins & the puppies and head to my in-laws to get snowed in. We thought since it was such a rare experience it would be a blast to get snowed in next door to Michael (Brandon's Brother), Lisa (my fabulous sis-in-law) and my precious nephews/twins' cousins, Joey & Jesse.  Nana & Gramps were at their beach house in St. George Island and what we thought/assumed would be 2 or so days snowed in turned out to be an entire week! We had so much fun and it was certainly a unique snow experience! 


It was nice being snowed in away from home so we really got to focus on each other as a family, playing, watching movies, drinking hot chocolate, playing trains, cuddling, cooking, baking, and LOTS of fun out in the snow! We did it up Southern Style in the snow-we had a knee board and giant tube called "Big Bertha" that we tied by a rope to the back of the Kubota-there is lots of land there and it looked like a winter wonderland! 


We played outside for hours, even the adults got on the knee board & tube, all 4 of the boys, and we all had such a memorable experience together! 





I coordinated a wedding-my big one for January on my own at Olde Towne Country Club which went perfectly! Yay! I really love having a job that gives me an opportunity to be home with the twins but also satisfies my creative outlet and gives me an opportunity to work with great friends-this weekend I got to work with Heather & Beth as the florists and my step-sis, Raleigh was my assistant.  We all work really well together-such a fun experience! 


My next wedding is in Feb. at The Biltmore with Amy from A Flawless Events-we love working together & make a great team! 

The awesome 10 day "snow-vacation" was finished off with our annual trip to the Atlanta Boat Show-I have gone with Brandon & his family every year since we met in 2003 and it has been really sentimental to take the twins every year since they were born. They are certainly boating babies! 



Today, Jackson & Colton returned to preschool at Hillside UMC after only going twice in the past month because of Christmas Break and the 5 days off of school from Snow (which thank goodness, there preschool is having make up days!)  They were so super excited to get back to school with their buddies and came home to tell me all about how they sang, danced, and painted with their buddies! Today, they sang Jesus Loves me-melts my heart to have Jackson & Colton sing it to me, especially when they sing it together!

I LOVE this article! It totally reminds me of myself and many of my friends & sorority sisters! We love being Stay at Home Mommas, spending our days with our lil ones & shaping their lives but also want to be able to contribute to society & find a creative outlet of our own all at the same time....The Mompreneur!  I feel like I should give a shout out to one of my sorority sisters, Danielle-she is the queen of The Mompreneur and I would like to think of myself as The Princess attempting to follow in her footsteps! Danielle has been such a great role model for me whether she realizes it or not because she has 3 adorable, active, & busy boys & a husband in the military with a successful photography business. She is so good, I trusted her to take the twins newborn portraits! Plug-DanielleHobbsphotography..... She was one of the first women that comes to my mind that proved to me that you can have it all, even when your babies are little! Another sorority sister who has been a great role model to me is Kristin in this area. She used to work at the District Attorney's office (with criminals on death row-ahhh!) and chose to stay at home with her 2 precious girls, even going as far to cheer her hubby on coaching GA Tech baseball and following him to Michigan while he coaches baseball there, yet she has been our chapter advisor for Gamma Phi Beta at UGA and managed to teach online classes while staying home with her girls.  I have a preschool mommy friend who works from home for Nationwide, yet finds a way to do it all while her 2 kids are at preschool 9-1 and I actually thought she was a stay at home mom for the entire first year I knew her because she is so good at balancing her schedule and making it to everything! All these girls & others have been a great inspiration to me as I have started taking on coordinating weddings on my own, working with A Flawless Events (whoa-we have A LOT of weddings on the calendar for 2011!)

Jackson & Colton....I hope your daddy & I are instilling the importance of hard work, dedication, & work ethic into your life at an early age.  Money is great and allows you to travel the world, but if you do what you love, everything will fall into place! Daddy works many long hours to provide for our family and he is able to do so because he created a company he loves.  It has been wonderful for Momma to work one Saturday a month coordinating weddings & volunteering for the sorority-both have been so rewarding and make me a better mommy! Some of my favorite days are when we get to spend time together as a family, go to one of your friends' birthday parties and I coordinate a wedding all in one day! I couldn't do that type of schedule everyday, but it sure gives me a great sense of accomplishment when it happens every month!
                                           Various fun days where we got to do fun things with family & friends and then I got to coordinate a wedding or do Recruitment Advising-fun stuff!





 My hope for you both is that you are hard-working men who contribute positive things in society in whatever profession you choose while finding a great balance by keeping your priorities straight with your family life and God-#1...God, #2....Family & Friends....#3.....Work  (-;  I so can't wait to see all the positive things you do with your lives! We love you!

Snow in the South!

After growing up in Ohio & Virginia, I certainly have a lot of fun snow memories, but nothing quite like the excitement of actually getting this much snow in the South, being snowed in at Nana & Gramps for 5 days and having such a blast with the twins' cousins, Joey & Jesse and Uncle Michael and Aunt Lisa right next door! These are memories to last a lifetime! We certainly used a lot of toys from the lake that apparently also work in the snow since we couldn't find actual sleds anywhere in Atlanta! Glad it is a special & rare occasion, but we had a blast enjoying it! Then, we came back home and it was 70 degrees the next weekend!

Happy New Year 2011!

We kicked off 2011 with Ashley & Evan at Marlow's Tavern. I love New Year Eve with Ashley because that is the night 3 years ago I asked her to be one of the twins' Godmothers! We had a fun first few days of the new year playing with Christmas Gifts, Addison's 3rd Birthday Party at Champion Kids, cooking our New Year Day traditional meal of Black Eyed Peas, Collared Greens, & Corn bread for good luck, health, & wealth, and lots of fun indoor activities because it was cold!

Southern Style Snow!

Looking outside right now makes me feel like I am back in Roanoke, Virginia with all this snow! This is the Atlanta Blizzard of 2011! We are lucky enough to have such warm & beautiful weather for most of the year, but once it hits Thanksgiving-beginning of March it is cold, but not usually THIS cold! We were blessed with a special Christmas gift of Snow this past Christmas, so special that it had not snowed on Christmas in Atlanta since 1872! This is actually unheard of to snow again so soon after and this much for us, Southerners! Now, I admittedly find the "Southern Bubble" hilarious in that snow is predicted 10% and there is no bread or milk found anywhere, people in panic mode, etc., but this time was different, even this Columbus, Ohio born/Roanoke, VA raised GA girl was preparing for this snow! Brandon, the twins, & I went snow attire shopping, sled shopping in which we were unsuccessful (one lady even said, What's that?), and decided to have a little getaway to the in-laws house because we knew it would be so pretty & so much fun to get snowed in here right next door to the twins' cousins, Jesse & Joey.  Since we were unsuccessful in finding a sled, we are going to be pulling some pool/lake rafts together and tying them by rope to 4-wheelers and sledding Southern Style, ya'll! I can't wait for the twins to wake up in the morning and see all this snow! I am thankful it doesn't happen often bc the cold is just unbearable, but looking forward to this unique & special snow day with the family tomorrow! Jackson & Colton have their camo snow boots, camo pants, & camo hats all ready for tomorrow!

Cheers to a New Year 2011!

Happy New Year 2011! Can you believe it!? 2011-that is seriously crazy! I remember back in the 90's watching futuristic movies that were set in 2010 or 2015! I guess we have come a long way with media & technology (all that I am Oh, so familiar with, since my hubby owns a home theater/audio company!) with Ipads, Iphone, Facebook, etc. Crazy to think we didn't have these things just 10 years ago.

So, it's time to make and hopefully not break those New Year's Resolutions again! I am going to make mine the same as last year because although I did stick to it, not nearly at the rate I would have liked to.  Last year & this year my resolution is to continue to blog when I can so the twins can have this as a journal/diary of our daily lives. For my 30th birthday last year, Brandon surprised me with a PINK MacBook laptop (along with Mariah Carey tickets at The Fox!) and it has made blogging easier for me to do....sometimes I can sit on the back deck or in a lawn chair while the twins are playing & do a quick 5 min. blog.  Last year, I was just getting started and learning how to actually work a blog.  This year, after some consideration and great chats with my beloved girlfriends, I have decided specifically which direction I want to take this blog.  I am a huge fan of tradition, have gained a love of cooking since becoming a SAHM (actually it is out of necessity-a woman with 3 men in her house MUST know how to cook and be good at it!), and just want to document so many things that the twins do & create daily.  I am going to keep record of many of those things here, going more in depth than just our day to day life, although that will be a main part of it, but including recipes, traditions, and actual pictures of the twins artwork & creations so that Hillside UMC Preschool crafts times two do not overtake my home office! (-;

So, here we go, 2011! A lot is going on in the daily lives of our family.  Brandon's company, Innovative Media Solutions, is thriving, despite the economy.  Good thing we love living in Atlanta and want to stay here for the rest of our lives because I'm not sure if his business would do this well in smaller towns or other locations, but it seems to work great here! While it is thriving, that means many long hours. I'm glad I have some friends who are in the same boat as me with their husbands. The bad part is he works until 1am many nights and sometimes 7 days a week.  The good part is he is able to create his own schedule and it is no problem for him to be at every doctor appointment, preschool event, meet for lunch, plan his vacations, etc. around our schedule.  He has built up a strong relationship with several celebrity clients from actors/actresses, musicians, music producers, Braves/Falcon players, and many CEO's, doctors, etc. throughout Atlanta.  This has been the "meat" of his company, but he also enjoys working with middle class suburbia families in neighborhoods like the ones most of us live in and creating a space that their family can cherish whether it is their flat screen with surround sound or outdoor audio around their pool that their family will enjoy for years to come.  He has built so many great relationships with these families and comes home with gifts for the twins all the time from people I don't even know because he becomes such a friend to these families.  I am truly in awe of his custom work and right when I joke that I am the smart one in the family since I went to college and he did not, I realize I am mistaken, because he has built this company from scratch at the age of 18, and besides some annual training, he has read & taught himself everything he knows.  It has been so rewarding & fascinating to watch him build his company, some years better than others, and a great experience to take this journey with him! Go Team Chili's! (-;
(That is where we met and to this day, we still get together and Yell Go Team Chili's before my surgeries, before IVF, before the twins' c-section, or just at the park-we are so cheesy!)

Jackson & Colton are the lights of our life. If you are reading this and know me, you already know this! We were at dinner with our great friends, Amanda & Charley Adams & Stephanie & John Cahill watching the Falcons game a few weeks ago and we were explaining that we are the first to admit we have total "only child syndrome" when it comes to our twins. When one is faced with the very real chance of never having children and then on your last chance before your hysterectomy you are blessed with twins and you know these are your only ones you are having, you can't help but spoil the lil suckers! Bless their hearts, if they become famous one day, they totally won't be jaded by the papparazzi, after having me be their Momma with my 3 cameras! I make sure to get at least one picture a day of them-hello-even though I have twins, they are obviously the same age, so I get one time to watch these two cutie pies grow up and it is going fast! I love documenting their lives & I hope it is something that is passed on for years to come.

They are both between 35-36 lbs. and for the most part extremely healthy & active little boys! Thank goodness for the techniques I learned in some of my favorite parenting books that helped me learn how to do sleep training, they are sleeping champs! They sleep 8pm-8am everynight and nap 1:00-4:30pm consistently.  Of course, there is always an off day here and there and we might be gone all day and they do great with no nap if needed, or one may wake up earlier than the other and I cherish the RARE one on one time I might get.  For the most part, they nap great and sometimes sleep til 5pm! We love spending our days OUTSIDE (Amen to the South & some great weather bc we love warm weather for the most part and Snow about once or twice a year!), at Lifetime fitness, playdates with friends & cousins who all live near us, preschool, library, long walks, playing on their playset, cuddling on the couch watching a movie, playing with their train sets, fun bubble baths, cooking & baking, reading (hello-Momma is a former language arts teacher!), arts & crafts, and most of all hugs, kisses, and learning manners!

As for me, I'm continuing my role as the Recruitment Advisor for Gamma Phi Beta at UGA and looking forward to a successful year with that. We made great strides last year and it was something I was very pleased with the outcome.  I'm continuing coordinating weddings with the fabulous Amy from A Flawless Events-it's the BEST SAHM job around...I get to work about 1 weekend a month at fabulous venues all over Atlanta with some amazingly talented & creative people and ensure that these couple's biggest day of their lives thus far goes flawlessly! It's a blast! I'm still on my journey to lose all my twin baby weight...well, I have lost all 50 lbs. of that since they were born, but getting the 20 lbs. from two cycles of IVF is the hard part! Anyone who has gone through IVF & reading this is saying, "Amen Sister!" Putting all those crazy needles and drugs into your body and doing it more than once does some CRAZY things to a girls body, oh and then there is menapause, but that is for a later blog! Anyways, Lifetime Fitness continues to help me with that and I am glad to do it the right way with diet & exercise. Crazy to think I have lost 50 lbs. since the twins arrived but still have 20 to go! The Shamrock 5K will be here again before we know it, but I don't think I will be pushing the twins in the double jogger this time! I continue to be blessed with some of the most amazing friends a girl can have-women in so many walks of life who inspire me daily & looking forward to many more fun times together this year!

I still need to go back and fill in on some months that I missed since May 2008 and I will do that on random days when I have time so it is consistent for the twins later on, so if you follow this and see a posting from Dec. 2008 or July 2009, that is the reason why! ha ha!
